Strawberry kiwi ‘mojito’

Posted on November 30, 2013

I’m feeling a little guilty for making only made 2 posts this month. And both of them being brown foods, how monotone does that make my homepage look?! Think of this as an effort to put some colour back into my web presence. Red and green because Christmas is just around the corner – less than 3 weeks away – yikes! Strawberry and kiwi are a lovely combination, and mojitos are such a refreshing summer drink (fyi for overseas visitors, Christmas in Oz is a hot summer’s affair :)). Mash them up together and this is what you get.

I’m not a very big drinker, so I’ve kept the alcohol a little lower for my tastes, feel free to up this amount as you please. To make sugar syrup, mix equal amounts of sugar and hot water until sugar has dissolved (about 1 tablespoon of each should yield the 2 tablespoons of sugar syrup required in this recipe). For a kid friendly version, omit the rum and sugar syrup, then replace soda water with lemonade.

Strawberry kiwi ‘mojito’ (makes 2 hi-ball drinks)

  • 1 kiwi fruit
  • 3 strawberries
  • ~10 mint leaves, roughly torn
  • juice of 1/2 lime
  • 45mL white rum
  • 2 tablespoons sugar syrup
  • ~330mL soda water
  • ice cubes

  1. Dice kiwi fruit and strawberries and place into a cocktail shaker (an old jam jar would also do) with torn mint leaves. Muddle fruit and mint together (I used the back of a wooden spoon to do this).
  2. Add ice cubes, lime juice, rum and sugar syrup into the mixer and shake well.
  3. Divide mixture into 2 hi-ball glasses and top with chilled soda water.
  4. Garnish glasses with kiwi and strawberry. Enjoy immediately.

Now all you need to do is kick back your thongs (the kind you wear on your feet) and chill out with this fresh concoction. This was perfect on that random hot Wednesday night for us Melbournians!
